This really resonates. I recently prepared a live performance of a fully digital composition (performed using MIDI controllers). The constraint of having to modulate every single parameter by hand forced me to restrict the elements to that which was essential. I think the piece ended up stronger for it.
Also love the Herbie Hancock quotation. Would love to have heard that performance.
